WIAW!!!!

Herrrooo my lovies!

I did have an Easter Weekend recap in mind, but alas, I have a serious lack of pictures. Basically, I was at my church from 8am-1pm setting up, hiding randomly distributing Easter eggs in the grass, worshipping, volunteering, working with preschoolers, and taking down.

But I diiiiiiid get a visit from the Easter Bunny!! :)



And the weather was gorgeous and filled my heart with happiness - I took a nice, long walk in the sunshine.

For Easter dinner, Mom made ribz (a concept that still freaks me out! Not in a fear food way, but just...ribs...igshdIjdfsjhdfsud), but you know what ribs are freaking delicious when slathered in BBQ sauce so yeah. Plus roasted veggies and whole wheat bread!



I know, where's the mac and cheese?! I did have words. :)

'Twas a wonderful, low-key Easter, and best of all, it was filled with joy, love, and appreciation for my Lord and Savior. How good He is!!!

Apple Spice Oats+Peanut Butter

Apple Spice Oats with almond butter..again!

Vegan Pumpkin Baked Oatmeal, banana slices, and Sunbutter


Lunches:


Salad: spinach, black beans, red pepper, sugar snap peas, avocado


Brown rice, chickpeas, carrots/peppers/sugar snap peas, Lemon Vinaigrette, apple

Old pic, but had the exact same thing one day - whole wheat wrap with turkey, avocado, veggies, a pear, carrots, and trail mix

Dinners:


Mish-mosh - brown rice, green beans, bell peppers, chicken, almonds, and Greek yogurt



Snacks:

Trail mix+baby carrots

Quaker Oats Squares, almond milk, raspberries, and almond butter

Plain Greek yogurt, banana slices, honey, and Sunbutter

Choco-peanut butter-banana soft serve. Soooo decadent!

  1. All that nut butter is making me drool! I need to stock up! I gave up peanut butter for Lent, and then starting on Sunday, I went through a jar in 4 days and now I'm out... haha oops. Love your blog!

  2. Gahhh so many good eats! I HATE ribs. The thought of eating a little baby animal.... ew. haha. But everything else look amazing!! I NEED to try the pumpkin bake!!!!!

    1. Yeah the ribs I kinda had to like....suck it up, haha! I wouldn't eat them all the time, but it was a nice treat.

      Yeeesss make some baked pumpkin oatmeal, it's amazingness.
